Preheat 350 °F. |

Sift dry (first 7) ingredients together - stir in oats. |

In separate bowl, cream the oil and maple syrup for 3 minutes until light and fluffy.
Add the egg whites and beat on high for another 5 minutes, until light and fluffy.
Thoroughly mix in the applesauce. Gradually add the flour mixture, beating well after
each addition. |

Lightly coat a 10 inch pan with cooking spray. Pour the batter into the pan. Bake for
45 to 55 minutes until a knife inserted in the center comes out clean. Immediately invert the
cake onto a serving plate and remove the pan - If desired, lightly dust the top with confectioner's sugar. |
