2 1/4 c unbleached white flour
1 tsp. salt
1 1/2 tsp. baking soda
2 tsp. baking powder
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ground cloves
1 1/2 c rolled oats
1/3 c vegetable oil (canola)
1 3/4 c maple syrup
5 egg whites
1 1/2 c unsweetened applesauce
1. Preheat 350 °F.
2. Sift dry (first 7) ingredients together - stir in oats.
3. In separate bowl, cream the oil and maple syrup for 3 minutes until light and fluffy. Add the egg whites and beat on high for another 5 minutes, until light and fluffy. Thoroughly mix in the applesauce. Gradually add the flour mixture, beating well after each addition.
4. Lightly coat a 10 inch pan with cooking spray. Pour the batter into the pan. Bake for 45 to 55 minutes until a knife inserted in the center comes out clean. Immediately invert the cake onto a serving plate and remove the pan - If desired, lightly dust the top with confectioner's sugar.
