4 eggs
1 cup milk
3/4 cup flour
3/4 cup maple sugar or syrup
1 tsp. vanilla essence
4 slices 100% white wheat bread
14 oz. can black cherries, stoned
1/3 cup apple jelly, melted with 2 tbsp. water
1. Preheat the oven to 350°F.
2. In a bowl blend the eggs, milk, flour, sugar and vanilla essence; set aside.
3. Arrange the bread slices in a greased 9" quiche dish or deep pie plate. Spread the black cherries and their juice over the slices. Top with the egg mixture and bake for 40 to 45 minutes. Cool and glaze the top with the melted apple jelly.
