2 medium egg yolks
1/3 maple sugar or syrup
2 medium egg whites
1 cup 35% whipping cream
1/4 cup frozen blueberries
Fresh mint leaves
1. In a bowl, whisk the egg yolks and the maple syrup until they are pale; set aside.
2. Whisk the egg whites until they are stiff.
3. With a spatula, gently fold the egg whites into the yolk mixture. Then fold in the whipped cream.
4. Serve in tall champagne glasses and top with blueberries and the mint leaves.
