2 cups cranberries
1/2 cup maple syrup
1/2 cup water
4 medium eggs
2 cups milk
1 cup cream cheese
3/4 cup maple syrup
1 tsp. vanilla essence
1/2 cup ground almonds
1/2 cup oatmeal
1. In a pan bring to a boil the cranberries, maple syrup and water; simmer for 5 minutes and cool; set aside.
2. Preheat the oven to 350°F. In a food processor or electric mixer, blend the eggs, milk, cream cheese, maple syrup and vanilla essence; turn into a bowl.
3. With a spatula, mix in the cranberries, ground almonds and oatmeal. Turn into a greased gratin or baking dish and bake for about 45 minutes. Serve hot or cold.
