4 eggs
1/3 cup maple syrup
1 1/2 cups milk
1 tsp. vanilla essence
1/4 cup maple syrup
1. Chocolate shavings
2. Preheat oven to 325°F.
3. In a bowl, blend the eggs, maple syrup, milk and vanilla essence. Pour into 4 ramekins, place these in a baking dish and pour water into the dish; bake in the oven for about 45 minutes.
4. Cool in the refrigerator for at least 2 to 3 minutes before unfolding the follies.
5. In a pan, bring the maple syrup to a boil and reduce by half until very thick syrup is obtained. Draw zigzag patterns on the serving plates with this syrup. Unmold the follies and arrange in the centres of the plates; decorate with the chocolate shavings.
6. Place the rack in a pan with sides high enough to make a water bath.*
