Combine eggs, butter and milk. Mix quickly into the dry ingredients. Don't over beat. Ignore the lumps.
Dough may be mixed and then "rested" for 3-6 hours. Before cooking, test the griddle (pan) by letting a
few drops of cold water fall on it. If the water bounces and sputters, the griddle is ready to use. If the
water just sits and boils, the griddle is not hot enough. If the water vanishes, it is too hot!

Drop spoonfuls of batter onto the griddle and cook for 2-3 minutes. When bubbles appear, but before they
break, flip the pancakes. Turn only once. Cook the second side only about half as long as the first.

Serve hot with butter and L.B. Maple Treat Pure Maple Syrup!

Try adding banana slice, blueberries, or other fruit to the pancake batter for added flavour and nutrition.
Variations: Mix equal amounts of cream cheese with the maple syrup. Try adding a few spoonfuls of Grand Marnier
Liqueur to your Maple Syrup.
