Raspberry Sauce
In a pan, bring to a boil the raspberries, maple sugar or syrup and apple juice; simmer for 5 minutes.
Puree in a food processor and strain through a sieve; set aside.

In a large bowl mix together the eggs, maple sugar or syrup and the milk. In a non-stick skillet melt
the butter dip the English muffin halves in the egg mixture and fry them until golden about 1 minute on each side.

Arrange one Special French Toast on each plate, top with fresh fruit; pour over the Raspberry Sauce and cover with a
second toast. Garnish with a mint leaf.
