Raspberry Sauce
2 cups fresh or frozen raspberries
1/2 cup maple sugar or syrup
1/2 cup apple juice

Special French Toast
3 eggs
1/3 cup maple sugar or syrup
1 cup milk
1 tbsp. butter
4 English muffins, each split in half
Your choice of fresh fruit
Fresh mint leaves for the garnish
1. Raspberry Sauce
In a pan, bring to a boil the raspberries, maple sugar or syrup and apple juice; simmer for 5 minutes. Puree in a food processor and strain through a sieve; set aside.
2. In a large bowl mix together the eggs, maple sugar or syrup and the milk. In a non-stick skillet melt the butter dip the English muffin halves in the egg mixture and fry them until golden about 1 minute on each side.
3. Arrange one Special French Toast on each plate, top with fresh fruit; pour over the Raspberry Sauce and cover with a second toast. Garnish with a mint leaf.
