1/3 cup 35% cream, whipped
4 fresh or canned peaches, peeled, stoned and sliced
3/4 cup strawberries, cut into halves
2 tbsp. maple sugar or syrup

Maple Custard
4 egg yolks
1/3 cup maple syrup or sugar
1 cup hot milk
1/2 tsp. vanilla essence
1/2 tsp. cornstarch, dissolved in a little water
1. Maple Custard
In a double saucepan or in a pan over very low heart, stir together the eggs and maple syrup. Add the hot milk, vanilla essence and cornstarch. Cook stirring constantly until the custard will coat the back of a wooden spoon; cool in a bowl.

Gently fold in the whipping cream; set aside.

Arrange the sliced peaches and halved strawberries in 4 small gratin dishes, sprinkle with the maple sugar and top with the maple custard. Place under the broiler for 1 to 2 minutes to lightly brown the surface.
