3 medium eggs
3/4 cup maple sugar or syrup
1/2 cup butter
1/2 cup potato flour
3/4 cup all-purpose flour
2 tsp. baking powder
Pinch of salt
1/4 cup 2% milk
1 tsp. instant coffee granules
1 tbsp. boiling water
3/4 cup walnuts, in small pieces
Grated zest of 1 orange
Grated zest of 1 lemon
Walnuts for decoration

Coffee Cream Cheese Frosting
1/3 cup butter
1tsp. instant coffee granules
1 tbsp. boiling water
8 oz. low fat cream cheese
3/4 cup maple butter
2 tbsp. 2% milk
1. Preheat the oven to 350°F. In a food processor or electric mixer blend the eggs, sugar and butter for 2 minutes.
2. Add the potato flour, all-purpose flour, baking powder, salt, milk and coffee granules dissolved in the boiling water. Blend for 2 minutes until the mixture is smooth.
3. Add the walnut pieces and citrus zests and stir in gently with a wooden spoon. Turn into a greased and floured pan and bake for 40 - 45 minutes. Cool and turn out.
4. In a food processor or electric mixer, blend all the frosting ingredients. Spread the cake with the frosting and decorate with walnuts.
