Preheat the oven to 350°F. In a food processor or electric mixer blend the eggs, sugar and butter for 2 minutes.

Add the potato flour, all-purpose flour, baking powder, salt, milk and coffee granules dissolved in the boiling water. Blend for 2 minutes until the mixture is smooth.

Add the walnut pieces and citrus zests and stir in gently with a wooden spoon. Turn into a greased and floured pan and bake for 40 - 45 minutes. Cool and turn out.

In a food processor or electric mixer, blend all the frosting ingredients. Spread the cake with the frosting and decorate with walnuts.
