1 1/4 cups breadcrumbs
2 tbsp. chopped fresh parsley
1 green onion, thinly sliced
1 tbsp. chopped garlic
2 tbsp. butter, melted
2 tbsp. lemon juice
1/4 cup maple sugar or syrup
salt and pepper to taste
19 oz. can diced tomatoes
your choice of fresh herbs
4 salmon filets, 4 oz. each
8 prawns, shelled and deveined
12 large scallops
1. Preheat the oven to 400°F
2. In a bowl, mix together the breadcrumbs, parsley, green onion, garlic, butter, lemon juice and maple sugar; season.
3. Spread the tomatoes and herbs in the bottom of a baking dish. Place the salmon fillets on the top, and cover with the prawns, scallops and breadcrumb mixture. Bake for 15 to 20 minutes (complete the cooking under the broiler if desired).
