8 home-style sausages
1 tbsp. olive or vegetable oil
1/2 cup chopped red onions
1 tsp. chopped garlic
12 oz. bottle of beer
1/2 cup of maple syrup
1 1/2 cups diced potatoes
1 cup diced carrots
14 oz. can lima or other beans
1/4 cup small sour gherkins, thinly sliced
chopped fresh parsley
1. In a pan of boiling water, poach the sausages for 5 minutes. Remove and drain.
2. In a large skillet or pan, heat the oil over medium heat and brown the sausages for 2 to 3 minutes. Once they are nicely browned, add the onions and garlic.
3. Pour in the beer and maple syrup. Add the diced potato and carrot, beans, gherkins and parsley. Season; cover and simmer for 15 minutes until the potatoes are cooked.
