1/2 cup (125 ml) orange juice concentrate
1/2 cup (125 ml) maple syrup
1 clove garlic, crushed
2 tbsp. (30 ml) dark soy sauce
4 salmon fillets of steaks (1 lb/500g total)
Orange slices or parsley (optional)
1. Combine the orange juice concentrate, maple syrup, garlic and soy sauce in a glass-baking dish just large enough to hold the salmon in a single layer. Mix well
2. Place salmon in orange mixture, turning to coat well on both sides.
3. Marinate in refrigerator for up to 4 hours.
4. Grill salmon over medium heat on a frill or frill pan lightly coated with oil.
5. Spoon marinate over fish during first 5 minutes of cooking; turn and cook for 5 minutes longer for salmon cut 1-in (2.5 cm) thick or until salmon is opaque and flakes easily with a fork. Add 10 minutes of cooking time per each additional 1-in (2.5 cm) of thickness. Garnish with orange slices and parsley, if you like.
