24 large prawns, shelled and deveined
1/4cup lemon juice
2 tbsp. chopped fresh parsley
1/4 tsp. ground coriander
1 tsp. fresh ginger, grated
Cayenne pepper to taste
12 oz. beer
1/3 cup maple syrup
2 tbsp. Soya sauce
1 tbsp. vegetable oil
1 green onion, thinly sliced

In a bowl, stir together the prawns, lemon juice, parsley, coriander, ginger and Cayenne pepper,
marinate in the refrigerator for 1 to 2 hours. |

In a pan, bring to a boil the beer, maple syrup and Soya sauce; reduce until a thick syrup is obtained. Set aside. |

In a large skillet, heat the oil and saute the prawns for 1 to 2 minutes. Add the green onion and the beer syrup; allow to caramelize lightly. Serve with rice and a green salad. |
