1/2 olive or peanut oil
2 tbsp. rice or wine vinegar
1 tbsp. Soya sauce
2 tbsp. maple syrup
1 tbsp. grated fresh ginger
your choice of herbs
1 green onion, thinly sliced
1 can water chestnuts, thinly sliced
1 can bamboo shoots, thinly sliced
snow peas and cherry tomatoes for the garnish
1 1/2 cup shitaki mushrooms (or other varieties)

In a bowl, stir together the oil, vinegar, Soya sauce, maple syrup, ginger and herbs. Add the
onion, water chestnuts, bamboo shoots, mushrooms, snow peas and cherry tomatoes; toss well and serve. |
